# How To Make:

01 - Preheat oven to 400°F. Toss pitted cherries with olive oil, thyme, salt, and pepper. Spread on a lined baking sheet and roast for 15–20 minutes until soft and caramelized.
02 - Rinse farro under cold water. Combine farro, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 20–25 minutes until tender. Drain excess water.
03 - Whisk together extra-virgin olive oil, lemon juice, honey, Dijon mustard, orange zest, salt, and pepper in a small bowl until emulsified.
04 - Combine cooked farro, roasted cherries, orange segments, arugula, red onion, and half the pistachios in a large bowl. Drizzle with dressing and toss gently.
05 - Transfer salad to a serving platter. Top with crumbled feta and remaining pistachios. Serve at room temperature or slightly chilled.
