01 - Preheat oven to 425°F and line a baking sheet with parchment paper.
02 - Place cubed potatoes in a large mixing bowl. Add vegetable broth or water, smoked paprika, garlic powder, onion powder, dried rosemary or thyme, salt, and black pepper. Toss thoroughly to ensure all potato pieces are evenly coated.
03 - Spread seasoned potatoes in a single, even layer on the prepared baking sheet.
04 - Roast potatoes for 20 minutes.
05 - Remove baking sheet from oven and flip potatoes with a spatula for even browning.
06 - Return potatoes to the oven and roast for an additional 15 minutes, until edges are golden and potatoes are fork-tender.
07 - Remove potatoes from oven, sprinkle with chopped fresh parsley if desired, and serve immediately while hot.
