Winter Chickpea Warming Dish (Printable Version)

13 - 2 tbsp olive oil
14 - 1 1/2 cups vegetable broth
15 - Juice of 1/2 lemon

→ Garnishes

16 - 2 tbsp chopped fresh parsley
17 - 2 tbsp toasted pumpkin seeds

# How To Make:

01 - Preheat oven to 400°F for roasting vegetables.
02 - On a large baking sheet, toss carrots, parsnip, butternut squash, and red onion with 1 tablespoon olive oil, salt, and pepper. Roast for 25 minutes, stirring halfway, until tender and golden.
03 - In a large pot, heat remaining 1 tablespoon olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
04 - Stir in cumin, smoked paprika, cinnamon, and chili flakes. Cook for 30 seconds to release flavors.
05 - Add roasted vegetables, chickpeas, and vegetable broth. Bring to a simmer and cook for 10 minutes to meld flavors.
06 - Add spinach and cook until wilted, about 2 minutes.
