01 - Combine lentils and water in a small saucepan. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes until lentils are tender and most water is absorbed. Drain excess water.
02 - Place cooked lentils, milk, honey or maple syrup, cinnamon, cardamom, vanilla extract, and salt into a blender.
03 - Blend all ingredients until completely smooth and creamy.
04 - Pour the blended mixture back into the saucepan and heat gently over low heat, stirring constantly, until warmed through but not boiling, about 3 to 5 minutes.
05 - Divide the warmed smoothie between two mugs. Garnish with chopped toasted nuts and a sprinkle of cinnamon if desired. Serve immediately.
