01 - Rinse buckwheat groats under cold water. Combine buckwheat, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 12-15 minutes until water is absorbed and buckwheat is tender. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
02 - Whisk together Greek yogurt, vanilla extract, and maple syrup in a small bowl until smooth and well combined.
03 - Divide cooked buckwheat evenly between two serving bowls. Spoon vanilla maple yogurt over each portion.
