01 - In a medium bowl or jar, combine rolled oats, almond milk, Greek yogurt, chia seeds, honey or maple syrup, vanilla extract, and salt. Mix thoroughly until all ingredients are well incorporated.
02 - Cover the container and refrigerate for at least 8 hours, allowing the oats to absorb the liquid and the mixture to thicken properly while flavors meld together.
03 - In the morning, stir the oat mixture. If the consistency is too thick, add a small splash of almond milk to reach your desired texture.
04 - Divide the prepared oat mixture evenly between two serving bowls.
05 - Arrange fresh fig slices, toasted walnuts, shredded coconut, and the extra chia seeds on top of each bowl. Drizzle with additional honey or maple syrup if desired.
06 - Serve immediately while chilled. No additional cooking required.
