Hearty oat groats gently simmered with vanilla and cardamom, finished with berries, nuts, and a drizzle of maple.

# What You'll Need:

→ Groats Base

01 - 1 cup oat groats, rinsed
02 - 2 1/2 cups water
03 - 1/2 teaspoon ground cardamom
04 - 1 vanilla bean, split and seeds scraped or 1 teaspoon pure vanilla extract
05 - Pinch of salt

→ Sweetener & Milk

06 - 1 tablespoon maple syrup or honey, plus extra to taste
07 - 1/2 cup milk of choice, dairy or plant-based

→ Toppings

08 - 1/2 cup fresh berries, such as blueberries, strawberries, or raspberries
09 - 1/4 cup chopped nuts, such as almonds, pistachios, or walnuts
10 - 1 tablespoon unsweetened coconut flakes, optional
11 - 1 tablespoon chia seeds, optional

# How To Make:

01 - In a medium saucepan, add oat groats, water, ground cardamom, vanilla bean seeds and pod or vanilla extract, and a pinch of salt.
02 - Bring the mixture to a gentle boil over medium-high heat, then reduce to low. Cover and simmer for 30 to 35 minutes, stirring occasionally, until the groats are tender and most of the water is absorbed.
03 - Remove and discard the vanilla pod if using. Stir in maple syrup or honey and milk of choice. Continue to cook for an additional 2 to 3 minutes until the mixture reaches a creamy consistency.
04 - Divide the hot oat groats into two serving bowls.
05 - Top each portion with fresh berries, chopped nuts, and, if desired, coconut flakes and chia seeds.
06 - Drizzle with additional maple syrup or honey to taste. Serve warm.

  • Forgetting to stir every so often leads to oats sticking on the bottom, so keep a patient eye (and spoon) on the pot.
  • Switching from water to partial coconut milk at the end was the creamy upgrade I hadn’t expected.
03 -
  • Letting the groats rest for five minutes off the heat finishes the texture perfectly and makes serving easier.
