# What You'll Need:

01 - 7 ounces firm tofu, pressed and cubed
02 - 1 tablespoon olive oil

07 - 1 cup baby spinach, washed
08 - 1/2 red bell pepper, sliced
09 - 1/2 small red onion, thinly sliced
10 - 1/2 cup cherry tomatoes, halved

→ Avocado Sauce

11 - 1 ripe avocado
12 - 2 tablespoons lemon juice
13 - 1 tablespoon olive oil
14 - 1 tablespoon water
15 - 1/4 teaspoon salt
16 - 1 clove garlic, minced

# How To Make:

01 - In a medium mixing bowl, combine tofu cubes with olive oil, turmeric, smoked paprika, black pepper, and salt until evenly coated.
02 - Heat a nonstick skillet over medium heat. Add tofu and cook for 8 to 10 minutes, turning occasionally until golden and crispy on all sides. Remove and set aside.
03 - Using the same skillet, add a splash of olive oil if necessary. Sauté red onion and red bell pepper for 3 to 4 minutes until slightly softened. Add cherry tomatoes and spinach, cooking for another 2 to 3 minutes until spinach is wilted. Remove from heat.
04 - In a blender or with an immersion blender, combine avocado, lemon juice, olive oil, water, salt, and minced garlic. Blend until smooth and creamy, adjusting water for desired consistency.
05 - Divide sautéed vegetables between two bowls. Top with crispy tofu, drizzle with avocado sauce, and garnish with chopped chives and toasted pumpkin seeds. Finish with freshly ground black pepper.
06 - Serve immediately while warm.
