01 - 3 large red bell peppers, halved and seeded
02 - 6 ripe tomatoes, quartered

# How To Make:

01 - Preheat your oven to 425°F (220°C).
02 - Arrange the red bell peppers cut side down, tomatoes, onion, and garlic cloves on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.
03 - Roast in the oven for 25 to 30 minutes, until the vegetables are soft and slightly charred.
04 - Transfer the roasted vegetables to a large pot. Add the vegetable broth, smoked paprika, and thyme. Bring to a boil, then reduce the heat and simmer for 10 minutes.
05 - Use an immersion blender or transfer to a blender in batches to puree the soup until smooth.
06 - Stir in the remaining tablespoon of olive oil and the cream if using. Taste and adjust seasoning with more salt and pepper as needed.
