01 - Place chickpeas, tahini, lemon juice, garlic, cumin, and salt into the bowl of a food processor.
02 - Process for 1 minute, then pause to scrape down sides with a spatula.
03 - With the processor running, gradually add cold water until mixture becomes creamy and smooth. If necessary, blend in additional water, 1 tablespoon at a time.
04 - Taste and adjust salt, lemon juice, or other seasonings as preferred.
05 - Transfer mixture to a serving bowl. Sprinkle with additional smoked paprika if desired and serve immediately.
