01 - Place the pecans and oats in a food processor. Pulse until finely ground.
02 - Add the pitted dates, maple syrup, vanilla extract, cinnamon, and salt. Process until the mixture clumps together and forms a sticky dough.
03 - Scoop out tablespoon-sized portions and roll into balls using your hands.
04 - If desired, roll the balls in extra chopped pecans or shredded coconut for added texture.
05 - Arrange on a plate or tray and chill in the refrigerator for at least 30 minutes before serving for best texture.
