01 - Pulse rolled oats in a food processor until coarse meal forms
02 - Add shredded coconut, dates, lemon juice, lemon zest, coconut oil, vanilla extract, and sea salt to processor
03 - Process until mixture becomes sticky and holds together when pressed. Add 1-2 teaspoons water if too dry
04 - Scoop tablespoon portions and roll into balls using hands
05 - Roll each ball in extra shredded coconut for coating
06 - Place on tray and refrigerate at least 30 minutes for optimal texture
