# How To Make:

01 - Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, celery, and red bell pepper. Sauté for 7-8 minutes until softened and fragrant.
02 - Stir in tomato paste and cook for 1 minute to deepen flavor.
03 - Add diced tomatoes with juices, chickpeas, vegetable broth, oregano, thyme, basil, smoked paprika, black pepper, salt, red pepper flakes, and bay leaf. Stir well to incorporate all seasonings.
04 - Bring to a boil, then reduce heat and simmer uncovered for 25 minutes, stirring occasionally to prevent sticking.
05 - Remove the bay leaf and discard. Stir in fresh parsley and lemon juice. Taste and adjust salt and pepper as needed.
06 - Ladle hot soup into bowls. Serve with crusty bread if desired.
