Grilled Mango Lime Quinoa Salad (Printable Version)

01 - 1 cup quinoa, rinsed

# How To Make:

01 - Bring water or broth to a boil in a saucepan. Add quinoa, reduce heat to low, cover, and cook for 15 minutes or until liquid is absorbed. Fluff with a fork and allow to cool.
02 - Preheat grill or grill pan to medium-high. Lightly brush mango wedges with olive oil. Grill mango 2 to 3 minutes per side, until grill marks emerge and the fruit is slightly caramelized. Transfer to a plate, let cool, then dice into bite-sized pieces.
03 - Whisk together lime zest, lime juice, extra-virgin olive oil, honey or maple syrup, minced garlic, ground cumin, salt, and pepper in a small bowl.
04 - In a large mixing bowl, toss together cooled quinoa, grilled mango, red bell pepper, cucumber, red onion, and cilantro. Drizzle with dressing and toss gently to coat.
