→ Lentils

01 - 1 cup cooked green or brown lentils, drained and cooled

05 - ¼ cup sunflower seeds
06 - ½ teaspoon ground cinnamon

09 - ¼ cup melted coconut oil
10 - 1 teaspoon vanilla extract
11 - 1 large egg, lightly beaten

# How To Make:

01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
02 - In a large bowl, mash the cooked lentils with a fork until mostly smooth.
03 - Add rolled oats, chopped nuts, dried cranberries or raisins, sunflower seeds, cinnamon, and salt to the mashed lentils. Stir to combine thoroughly.
04 - In a separate bowl, whisk together honey or maple syrup, melted coconut oil, vanilla extract, and the beaten egg.
05 - Pour the wet ingredient mixture into the dry mixture and mix until fully integrated.
06 - Transfer the mixture to the prepared pan and press down firmly and evenly with a spatula or your hands.
07 - Bake for 30 to 35 minutes until golden and set.
08 - Allow to cool completely in the pan, then lift out and cut into 12 bars.
