01 - Preheat oven to 375°F and line a baking sheet with parchment paper.
02 - In a large bowl, combine spinach, spring onions, red bell pepper, garlic, and all cheeses.
03 - Add eggs, breadcrumbs, flour, oregano, nutmeg, salt, and pepper. Mix until well combined.
04 - Scoop heaping tablespoons of mixture and shape into small balls. Arrange evenly on prepared baking sheet.
05 - Bake for 16–18 minutes until golden and set.
06 - Allow to cool slightly before serving. Serve warm or at room temperature.
