Curried Chickpea Breakfast Bowl (Printable Version)

# What You'll Need:

01 - 1 can (15 oz) chickpeas, drained and rinsed
02 - 1 tablespoon olive oil
03 - 1 teaspoon curry powder
04 - 1/2 teaspoon ground cumin
05 - 1/4 teaspoon smoked paprika
06 - 1/4 teaspoon ground turmeric
07 - 1/4 teaspoon salt
08 - 1/8 teaspoon black pepper

→ Vegetables

09 - 1 small red bell pepper, diced
10 - 1 small zucchini, diced
11 - 2 cups baby spinach
12 - 2 green onions, sliced

→ To Serve

13 - 1 ripe avocado, sliced
14 - 1/2 cup cherry tomatoes, halved
15 - 1 tablespoon fresh cilantro, chopped
16 - Lemon wedges (optional)

# How To Make:

01 - Heat olive oil in a large skillet over medium heat until shimmering.
02 - Add chickpeas to the skillet. Sprinkle with curry powder, cumin, smoked paprika, turmeric, salt, and pepper. Stir well and sauté for 5–6 minutes until the chickpeas are golden and fragrant.
03 - Push chickpeas to one side of the skillet. Add bell pepper and zucchini to the other side. Sauté vegetables for 3–4 minutes, then stir everything together.
04 - Add baby spinach and half of the green onions. Cook for another 2 minutes until the spinach wilts.
05 - Divide the curried chickpea mixture between two bowls. Top each with sliced avocado, cherry tomatoes, remaining green onions, and fresh cilantro.
06 - Serve warm with lemon wedges on the side.
