Cozy Kale Soup (Printable Version)

# What You'll Need:

→ Vegetables

01 - 1 tablespoon olive oil
02 - 1 medium yellow onion, diced
03 - 2 garlic cloves, minced
04 - 3 medium carrots, peeled and sliced
05 - 2 celery stalks, diced
06 - 3 medium Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
07 - 1 bunch kale, stems removed and leaves chopped (about 6 cups)

08 - 6 cups low-sodium vegetable broth
09 - 1 teaspoon dried thyme
10 - 1/2 teaspoon dried oregano
11 - 1/2 teaspoon smoked paprika
12 - Salt and freshly ground black pepper, to taste
13 - 1 bay leaf

14 - 1 (15 oz) can cannellini beans, drained and rinsed

# How To Make:

01 - Heat olive oil in a large pot over medium heat. Add onion and sauté for 3 minutes until translucent.
02 - Stir in garlic, carrots, and celery. Cook for another 4 minutes, stirring occasionally.
03 - Add potatoes, kale, dried thyme, oregano, smoked paprika, and bay leaf. Mix well.
04 - Pour in vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, until potatoes are tender.
05 - If using, add cannellini beans and heat through for 5 minutes.
