Cozy Kale Bowl Delight (Printable Version)

10 - 2 tablespoons warm water, plus more as needed

13 - 3 tablespoons olive oil, divided
14 - 1 teaspoon smoked paprika
15 - 1/2 teaspoon ground cumin
16 - Salt and black pepper, to taste

# How To Make:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Toss diced sweet potatoes and chickpeas with 2 tablespoons olive oil, smoked paprika, cumin, salt, and pepper. Spread in a single layer on the baking sheet.
03 - Roast for 25-30 minutes, stirring halfway, until sweet potatoes are tender and chickpeas are golden.
04 - Heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Sauté red onion for 2 minutes. Add kale and a pinch of salt; cook, stirring, until wilted and bright green, about 3-4 minutes.
05 - Whisk together tahini, lemon juice, maple syrup (or honey), minced garlic, warm water, salt, and pepper until smooth. Adjust consistency with more water if needed.
06 - Divide cooked grains among bowls. Top with sautéed kale and onion, roasted sweet potatoes and chickpeas, and sliced avocado. Drizzle with tahini dressing.
