01 - Preheat oven to 400°F. Line baking sheet with parchment paper or lightly grease with cooking spray.
02 - In large bowl, mix broccoli, red bell pepper, carrot, corn, and red onion until evenly distributed.
03 - Whisk eggs, cheddar cheese, Parmesan cheese, flour, parsley, garlic powder, salt, and black pepper in separate bowl until smooth and well combined.
04 - Pour egg and cheese mixture over vegetables. Mix thoroughly until all ingredients are evenly coated and sticky mixture forms.
05 - Scoop approximately 2 tablespoons mixture per cluster, shaping into small mounds. Place on prepared baking sheet, spacing 1 inch apart.
06 - Bake for 20 to 25 minutes until clusters are golden brown and set in center.
07 - Let cool on baking sheet for 5 minutes before serving. Serve warm or at room temperature with yogurt dip or hummus.
