02 - Bring mixture to a gentle boil over medium heat. Reduce heat to low, cover tightly, and simmer for 15–18 minutes. Stir occasionally to prevent sticking, cooking until quinoa is tender and most liquid has been absorbed.
03 - Remove saucepan from heat. Stir in maple syrup and vanilla extract until fully blended into the warm quinoa mixture.
04 - Divide the prepared porridge evenly between two serving bowls, ensuring each receives an equal portion of apple pieces.
05 - Top each bowl with chopped walnuts and dried fruit if using. Drizzle with additional maple syrup to taste. Serve immediately while warm.
